Ingredients
- 2 small ripe banana
- 2 whole egg
- 4 egg whites
- 1/4 cup blueberries
Instructions
- Mash the banana and crack the eggs in it, stirring until the mixture congeals. For a smooth texture, blend on medium low speed for 45 seconds.
- Spray a griddle or frying pan with cooking spray and heat on medium heat.
- When the pan is warm to your hand 6 inches above it, pour about a 2.5-inch wide puddle of batter for one pancake. Repeat for others. Sprinkle in 3-5 blueberries in each (the smaller ones work best).
- Carefully flip the pancake after about 1-2 minutes when it browns.
