Ingredients
- 3 avocados, pitted, peeled and cubed
- 2 tablespoons fresh lemon juice (or to taste)
- 2 roma tomatoes, chopped
- 3/4 cup red bell pepper, seeded and chopped
- 1/4 cup red onion, chopped
- 3/4 cup sweet corn, drained
- 3/4 cup black beans, drained and rinsed
- 1/2 cup fresh chopped flat leaf parsley
- 2 teaspoons chipotle peppers, seeded and chopped + 2 teaspoons adobo sauce from canned chipotle chilies, or to taste
- 1 teaspoon salt (or to taste)
- 1/8 teaspoon freshly ground black pepper (or to taste)
- Tortilla chips for serving
Instructions
- In a medium bowl, mash the avocados to the desired consistency, add lemon juice and stir.
- Stir in the tomatoes, bell pepper, corn, black beans and parsley.
- Sprinkle with adobo sauce, chipotle peppers, freshly ground black pepper and salt. Mix thoroughly. Serve immediately or refrigerate for a few hours to enhance flavours.
